Soft Flax Pretzels Recipe -Easy, Healthy + Delicious homemade soft pretzels are a great whole grain snack, appetizer or side dish!

Dissolve in small bowl; let sit 10 minutes:
1 Tablespoon yeast
1 teaspoon sugar
1 1/2 cup warm water
1 Tablespoon oil (we use coconut oil)
In separate bowl, mix:
3 1/2 cup flour
1/2 cup Flakes o' Gold or Ground Premium Gold Flaxseed
1/4 cup sugar (if you like less sugar like we do, use 1-2 Tablespoon sugar)
1 1/2 teaspoon salt
Mix dry ingredients with wet ingredients until sticky. You want your dough to stick to your fingers, this will make your bread perfect (and not dry tasting).
Knead dough for about 25-30 turns -the goal is to get the yeast throughout the dough and to get it working, so that it will rise well.
Place the dough in a oiled bowl -we use a little flax oil and cover the dough and let it sit in the bowl.
-Let it sit a warm place -near oven or stove if you are cooking... this works perfect -or wherever -it may take longer to rise if it is not as warm.
Let the soft pretzels dough double in size.
After the dough has risen, knead gently in the bowl -add a little oil to your hands before you knead -this helps the stickiness.
Shape into pretzels:
Roll dough out to ~ 12-18 inch ~1/4 inch wide.
Make dough into a u shape. Cross the ends of the dough and twist twice.
Pull the ends of the dough up and over the circle shape at the top.
When you have finished shaping the dough into pretzels, heat a pan of water, place 1-3 pretzels at a time into hot water and remove them once they float.
Place on well-greased cookie sheet -or on well greased cast iron pans.
Sprinkle with sea salt or rock salt (optional).
Bake for 10-20 minutes or until golden brown on top.
When done, remove the homemade soft pretzels from pan and cool on wire rack or plate.
Dip in mustard,
Brush with butter and sprinkle homemade soft pretzels with cinnamon sugar or salt.
Or Dip in Honey-butter.
