Here's a recipe that is delicious and quick! Healthy muffins with a little energy-booster! Kids love these too!
Blend together:
1/2 c. + 2 Tbsp. butter (chilled or softened)
3/4 c. sugar
1/4 c. brown sugar
1 egg
3 ripe smooshed bananas
Add:
2 Tablespoon instant coffee dissolved in 1/4 cup water, milk or cream (or use 1/4 cup freshly made coffee)
1 teaspoon vanilla extract
In medium bowl, mix thoroughly:
1-1/4 cup white flour
3/4 cup wheat flour
1/2 cup Flakes o' Gold or ground whole Flaxseed
1/4 teaspoon salt
1-1/2 teaspoon baking powder
1/2 teaspoon baking soda
Add wet ingredients to dry and mix just until blended.
Fold in:
1/2-3/4 cup semisweet chocolate chips
Spoon mixture into paper lined muffin cups or greased muffin pan. Fill 2/3 full.
Bake for 20-25 minutes (or until toothpick inserted comes out clean) at 300* (don't overbake). Cool on wire racks. Enjoy these delicious muffins with a fun twist!
