Try this Delicious Flax Apple Crisp low fat with Flax seed
Warm, Homemade and Delicious!
Filling
3 c chopped apples (1 1/2 - 2 pounds ~3 1/2-4 medium apples)
1 Tbs sugar
1 Tbs lemon juice
1/2 tsp grated lemon zest from 1 lemon
Mix these ingredients together right in the 8" pan or 9" pie plate (we prefer to use stoneware or glass)
*For cooking apple crisp low fat, use equal amounts of Granny Smith and McIntosh apples ~or whatever apples you have!
*Peel, core and chop apples into ~1 inch chunks (you can leave the skin on if you want added nutrition, but it does make the texture slightly different).
Topping Mixture
1/4 cup flour (you can use any kind of flour, rice flour is a nice option and gluten free)
1/4 cup Flakes o' Gold or Ground Premium Gold Flaxseed
1/4 cup packed brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp sea salt
1 Tbs maple syrup (or you can substitue 2 Tbs brown sugar and 1/2 Tbs water)
1 Tbs water
Optional: 1/2-3/4 cup chopped walnuts, pecans or almonds
Optional: if you like oats in your apple crisp topping, add 1/4 cup Oats and 1/2 Tbs water.
*Mix these ingredients together in a medium size bowl. Do not overmix. Topping should be soft and easy to drop on top of filling.
Heat oven to 375*, Bake in middle position of oven for 45 minutes until fruit is bubbling and topping is deep golden brown.
Serve warm or at room temperature.
Flax Apple Crisp low fat is Delicious with whipped cream or ice cream (low fat of course :) on the side!
Variations:
To switch up the flax apple crisp, add nectarines, peaches, pears or plums to replace a portion of the apples. Just make the total fruit for the Fruit Crisp a total of 3 cups.
Chop the nectarines, peaches, and plums into half-inch wedges, and cut pears into 1 inch chunks. When using plums, add 1 Tbs cornstarch or quick tapioca to the fruit filing.
For additional flavor enhancement, add 1/2 tsp grated fresh ginger.
Serves 4-5
If you want a larger apple crisp to serve 10, double the recipe and use a 9x13 pan, Bake at 375* for 55 minutes.
