Hello, I have been eating milled flax seed in my oatmeal for about two years now. Will microwaving flaxseed denature the omega-3 fatty acids?

Great job eating the milled flax seed on your oatmeal... it will really pay off for your health over the long term!
Well, it is hard to say... but as you likely know from reading on our site that when you heat up flax that the fragile Omega 3 Oil can start to break down and go rancid. It is important to eat quality Omega 3 - read more on how to test for quality Omega 3: golden vs brown flax seed.
I can't say for sure if you will have lessened the benefits of flax by microwaving it; however, I recommend to everyone a little change of how you do things:
Try microwaving your oatmeal and then throw your cold milled flax seed on top. Do this for a couple months and see if you notice any differences.
Some of the differences you may notice would be related to the benefits of the Omega 3 Oils -flax benefits to your skin, hair, nails, even benefits for our brains- Brain Omega 3 Flaxseed!
If you for some reason don't eat your oatmeal and flax after you have heated it up, then store it in the fridge to help slow the break down and denaturing of Omega 3s!
After the Omega 3 oil has been heated up, it will start the process of denaturing and breaking down. This is why you should store it in the fridge -this will help slow the process.
We do cook with flax seed and we highly recommend it be used in cooking... because of all the benefits in cooking with flax -including the fiber, lignans, protein, etc.
However, studies aren't clear, but there may be some loss of the Omega 3 benefits during cooking with flax. This is why we do say it is still important to eat some raw cold milled flax every day due to the need to get necessary Omega 3 our body craves!
